Ingredients

  • 125g pork shoulder

  • 100g vermicelli (bun)

  • Fish sauce

  • Special Blend:

  • Garlic

  • Lime leaves

  • Lemongrass

  • Marinade:

  • 1 tablespoon fish sauce

  • 1/2 tablespoon sesame oil

  • 1/2 tablespoon honey

  • 1 tablespoon Maggi seasoning

  • Oil (for preventing sticking)

  • Toppings:

  • Greens (mint, lettuce)

  • Cucumber (julienned)

  • Vietnamese pickled carrots and radishes

  • Scallion oil

  • Cha gio (optional, but highly recommended)

  • Fried shallots

Directions

  • Marinate the pork shoulder with the special blend and let it sit for 3 hours to overnight.
  • Prepare your assembly toppings, including greens and vermicelli.
  • To make scallion oil, place chopped scallions in a heatproof bowl and drizzle hot neutral oil over them.
  • Grill the marinated pork in the air fryer at 180°C for 12-15 minutes.
  • Assemble everything in a bowl, topping it with Vietnamese fish sauce (nuoc mam) and sprinkling fried shallots on top. Now, we’re ready to enjoy!

Notes

  • Highly suggest using protein cuts with fat content (such as pork neck or shoulder) because fat equals FLAVOR!!
