1 tablespoon Sugar
Oil
1 head of Scallions
3 cloves Garlic
100ml Water
1 tablespoon Fish Sauce
Chili flakes (to taste)

Directions
- Heat oil in a pan over medium heat. Add sugar and allow it to caramelize until rich in color.
- Add chopped scallions and garlic to the caramelized sugar. Stir until fragrant and lightly browned.
- Add ribs to the pan, coating them with the caramelized mixture. Cook until the edges are golden.
- Pour in water and fish sauce to cover the ribs. Bring to a simmer, then cover and braise until reduced, tender, and glossy.
- Sprinkle with chili flakes and chopped spring onions for extra flavor. Serve hot with steamed rice on the side. Enjoy!
