Spicy Thai Basil Chicken (ผัดกระเพราไก่)

300g ground pork
3-4 cloves garlic (minced)
2-3 Thai bird’s eye chilies (finely chopped)
1 tbsp oyster sauce
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp sugar
Handful of Thai holy basil leaves
Jasmine rice (for serving)
1 Fried egg
Directions
- Prep: Roughly mash the garlic and chilies. Pick fresh Thai basil leaves.
- Fry garlic & chilies: Heat some oil in a pan. Add garlic and chilies, stir-fry until fragrant
- Cook pork: Add ground pork to the pan and break it up. Stir-fry until fully browned
- Stir in oyster sauce, soy sauce, and sugar. Add a splash of water or chicken stock if you like more sauce
- Throw in the Thai basil, stir for 30 seconds until it wilts. Turn off heat
- Serve: Plate with steamed jasmine rice and top it with a crispy fried egg. Enjoy!

- Use high heat to stir-fry for that signature smoky flavor. Plus, we wouldn’t want too much liquid coming out of the meat
