Ingredients

  • 300g ground pork

  • 3-4 cloves garlic (minced)

  • 2-3 Thai bird’s eye chilies (finely chopped)

  • 1 tbsp oyster sauce

  • 1 tbsp fish sauce

  • 1 tbsp soy sauce

  • 1 tsp sugar

  • Handful of Thai holy basil leaves

  • Jasmine rice (for serving)

  • 1 Fried egg

Directions

  • Prep: Roughly mash the garlic and chilies. Pick fresh Thai basil leaves.
  • Fry garlic & chilies: Heat some oil in a pan. Add garlic and chilies, stir-fry until fragrant
  • Cook pork: Add ground pork to the pan and break it up. Stir-fry until fully browned
  • Stir in oyster sauce, soy sauce, and sugar. Add a splash of water or chicken stock if you like more sauce
  • Throw in the Thai basil, stir for 30 seconds until it wilts. Turn off heat
  • Serve: Plate with steamed jasmine rice and top it with a crispy fried egg. Enjoy!

Tips

  • Use high heat to stir-fry for that signature smoky flavor. Plus, we wouldn’t want too much liquid coming out of the meat
  • Can’t find Thai basil? Don’t worry, you can use sweet basil – works as a substitute
  • Fry your egg in a HOT pan to get that classic crispy edges with runny yolk – Now that’s a true Thai dish!
