Pineapple Braised Pork is one of those dishes my family used to spoon-feed me as a kid because I couldn’t stand pineapple back then! 🍍 But now, it’s one of my favorite ingredients because you can do so much with it. Braised pork with pineapple

150g pork shoulder, cut into bite-sized pieces
100g pineapple (20g for marinade)
Lots of garlic, minced
Spring onions, chopped
- Marinate
20g pineapple, finely minced
3 tbsp soy sauce
1 tbsp sugar
Garlic, minced
Pepper, to taste
Directions
- Marinate the Pork: Combine pork with 20g minced pineapple, garlic, soy sauce, sugar, and pepper. Let it marinate for 20-30 minutes (max for best flavor).
- Cook the Pork: After marinating, heat oil over medium-high. Sauté spring onions and garlic until fragrant. Add the marinated pork and sauté for about 3 minutes until lightly browned.
- Braise: Add enough water (or coconut water for extra flavor) to the pan to cover the pork halfway. Let it braise until the liquid reduces by half and the pork is fully cooked.
- Add Pineapple: Stir in the remaining pineapple and cook until it softens but holds its shape, about 2-3 minutes. Turn off the heat and sprinkle with pepper and chopped spring onions.
- Serve with a warm bowl of rice and enjoy! 🍚
Notes
- Put pineapple after the pork is cooked so it won’t break apart
- Easier marinate: put your pineapple in the freezer and just grated it into your protein
